I love food almost as much as I love books, so when Author Elle Casey shared her favorite recipe, how could I possibly resist sharing it with you guys!! So check out her novel and her favourite recipe below.

IT HAPPENED IN VEGAS. I can't be held responsible. Things that happen there are supposed to stay there, right? Right? Yeeeah. Not so much. ... Andie's just days away from tying the knot, but there's just ooooone little glitch. Apparently, she's already married. Or someone with her name is married to a guy out in Oregon of all places, and the courthouse won't issue her a marriage license until it's all cleared up. Tripping her way through cow pies and country songs to meet up with a man who gets around places on horseback is her very last idea of how to have a good time, but if she's going to get married, make partner at the firm, and have two point five kids before she's thirty-five, she needs to get to the bottom of this snafu and fix it quick ... before her fiance finds out and everything she's been working toward goes up in flames.

I love to cook, so I have tons of recipes. But here's one that's a favorite of everyone I make it for.  I make a mean barbecue chicken salad that will have everyone raving, and it's great for a summer meal when it's hot out.  Here you go!

1/2 chicken breast per person
olive oil, garlic powder, salt, pepper, and a bit of lemon juice to marinate the chicken in for a few hours

can of corn (1 for every 6 people)
can of black or red beans (1 for every 6 people)
cherry tomatoes (4-6 per person)
avocado (1/2 per person)
boiled egg (1 per person)
lettuce (mix of iceberg and rocket/rocquette - it's a long thin leaf that's naturally garlicky)
1/2 cup of your favorite barbecue sauce (more or less to your taste)
1/2 cup of Hellman's mayonnaise (there is no substitute in my humble opinion)
2-6 tbsp of milk for thinning the dressing
1/2 onion per person
1/2 cup flour
oil for deep frying

1.  Barbecue the chicken.  If you don't have a bbq, just bake it.
2.  Cut the onions into very thin rings. Separate the rings. Toss them in a bag with flour to coat and then deep fry in vegetable oil until brown.  Salt them when they're out on a paper towel.
3.  Mix mayonnaise and bbq sauce to make a dressing.  Add milk to thin.
4.  Put lettuce mix on big dinner plates or pasta bowls if you have them.
5.  Put corn, beans, tomatoes, avocado, and cut-up boiled egg on the lettuce (make it pretty, y'all!)
6.  Slice the chicken into thin strips or chunks and put on top of salad.
7.  Drizzle the dressing over all of it.
8.  Top with fried onions.
9.  Eat every last bite because you know it's awesome, yo!
